I found it in Martha Stewart's "Great Food Fast" cookbook.

Here's the recipe:
Crispy Apricot Pork Chops
1 Tbsp olive oil (plus more for baking dish)
2 slices multigrain bread
4 pork chops
Salt and Pepper to taste
4 tsps Apricot jam
Preheat oven to 425 F, and oil baking dish. Put bread in a food processor, until bread is coarse crumbs. Add olive oil, and process just until oil and bread is combined. Season pork chops with salt and pepper, and place in baking dish. Spread 1 tsp of Apricot Jam on each pork chop. Sprinkle bread crumbs over the top. Bake until pork chop is done (approx. 15 - 20 minutes, depending on thickness of pork chop).
That's it. So simple, yet so good. I love apricot jam, so I always have some in the house. But, you could use any 'tart' jam, or marmalade instead. Enjoy!

I see you cooked the beans I gave you! I happened to have pork chops thawed for dinner tonight so made this. Used marmalade, because that's what I had on hand. You're right it is easy and very tasty!
